Ingredients

  1. 2 cups (240 g)all purpose flour
  2. 1/2 tsp (3 g)salt
  3. 1 tsp (5 g)baking soda
  4. 1/2 tsp (3 g)baking powder
  5. 1 tspground cloves
  6. 1 tspground cinnamon
  7. 1 tspnutmeg
  8. 1 1/2 sticksunsalted butter, softened
  9. 2 cups (400 g)sugar
  10. 2large eggs
  11. 1(425g/15oz) can pure pumpkin

    Preheat oven to 325º

    Grease two loaf pans

    In a medium bowl, combine dry ingredients

  4. 4

    In a large bowl, beat butter and sugar until just blended. Add the eggs one at a time, beating well after each addition. Continue beating until light and fluffy. Beat in the pumpkin - it will look lumpy, that's ok

    Add flour mixture and mix on low until combined

  6. 6

    Divide batter evenly into prepared pans. Bake 65-75 minutes or until tester toothpick comes out clean.

    Leave to cool in the pan for 10 minutes, then turn out onto a rack to cool completely.
