Ham & Cheese Croissant-Style Croissants:

Cut the puff pastry into 16 equal triangles. Cut the slice of cheese into 16 small squares.

Place a piece of cheese and some diced ham on the wide end of each pastry triangle.

Roll up each triangle into a croissant shape, starting from the wide end toward the tip. Place the croissants on a baking sheet lined with parchment paper.

Brush each croissant with egg yolk using a pastry brush. Preheat the oven to 350°F (180°C). Bake the croissants for 15 minutes.

For the Zucchini Croissants:

Cut the puff pastry into 16 equal triangles. Wash, dry, trim the ends off the zucchini, and dice it very finely.

Mix the Greek yogurt (or fromage blanc) with the teaspoon of chili salt. Place a little of the yogurt mixture and some diced zucchini on the wide end of each pastry triangle.

Roll up each triangle into a croissant shape, starting from the wide end toward the tip. Place the croissants on a baking sheet lined with parchment paper. Brush each croissant with egg yolk using a pastry brush.
