Ingredients

Serves 4 servings
  1. 4 cupsall-purpose flour (about 500 grams)
  2. 1/2 cupplain yogurt (about 120 grams)
  3. 1 tablespoonsugar
  4. 1/2 teaspoonbaking soda
  5. 1 teaspoonbaking powder
  6. 2 tablespoonsvegetable oil or cooking oil
  7. 1/2 teaspoonsalt, or to taste

    First, place the flour in a large bowl. Make a well in the center and add all the ingredients except the milk. Mix well. Gradually add warm milk while mixing to form a dough. (Note: Naan dough is best made with milk for extra softness, but if you have less milk, you can use just 1/2 to 1 cup milk and add some warm water as needed. The naan will still turn out soft.)

    Add the milk or water little by little while mixing. Don’t add all the milk at once, or the dough will get too sticky. If the dough feels sticky, don’t worry—just knead it well by punching it with your fists until you get a soft, smooth dough. To check, press the dough with your finger; it should spring back. Cover the dough and let it rest in a warm place for 1 hour.

    After 1 hour, the dough will have risen. Punch it down to release any air, and knead it briefly. Now your naan dough is ready to use.

    Break off a portion of dough and roll it out on a clean surface with a rolling pin into a round shape, slightly thicker than regular roti. Place the rolled naan onto a preheated griddle (tawa) over medium-high heat. When bubbles appear on top, flip the naan and cook the other side. Gently press the edges with a spatula so the naan puffs up. Transfer to a plate and brush with butter.

    Repeat with the remaining dough and keep the naan in a covered container to stay soft. Your delicious, soft naan is ready to serve.
