Rice Muffin

Muffin is a type of quick bread similar to cupcakes in shape and cooking methods but contains solid items mixed into better like berries and nuts that makes it crunchy from outside and spongy from inside and is more nutritious than cupcakes. It can be served in breakfast or high tea and is available in both sweet and savoury variety. Here I made it from rice flour to make it in healthier version.

Grind the rice and sugar together to make fine mixure, add backing powder, baking soda and pinch of salt in it and strain it through a sieve. Take one bowl add curd, oil and whisk together for 2 minutes to make fine paste.

Add wet mixture in dry ingredients and whisk together for 10 minutes to make cake like batter. Keep it aside for rest

Meanwhile Pre heat your oven/cooker and grezz muffin mold using oil. Pour batter in muffin mold and bake it for 7-10 minutes.

Your muffins are ready to serve.
