Gujarati khada bhat

Wash and soak rice for at least 25-30 mins.

Heat oil into the pressure cooker and add mustard seeds, let it crackle. Turn off heat and add whole spices, cumin seeds, chopped garlic, coriander leaves asafo etida and saute for a min.

Turn on the heat and add all vegetables and dry spices and salt. Mix well and saute for 2min.

Seice rice and keep the water to use, and heat that water. Add rice to cooker and saute for a min.

Now add hot water and some more if required. Make sure rice and veggies are covered with water. Let it simmer for 2min.

Then cover and cook for 5min on medium to low heat. Or till 1 whistle done. Wait for 5min to release pressure.

Serve hot in lunch or dinner. I served with my lunch. Stuffed gujarati brinjal and potato curry, roti and rice.
