Heat oil in a wok, once heated on medium flame add cumin seeds and after it splutters add asafoetida, dry red chilies, fresh curry leaves, mix and saute.

Now add fresh chopped tomatoes and salt to soften them. Cook for about 5 mins. Now lower the flame and add powdered spices viz Red chili, Turmeric, Coriander and Garam masala powder. Mix well.

Now add Potatoes and mix well with masala so that all potatoes get coated nicely.

Now add water and cook in medium flame for 5 mins, add salt and to balance sourness of tomatoes we add jaggery, mix well and fresh green chopped Coriander leaves

Cook for a minute and serve it hot with puris.
