Roasted Peanut Stew

There are so many angles to this story. First, I bought roasted street peanuts for eating but they spilled in my handbag. I was disgusted at the thought of eating them from the 'floor' of my handbag and they were a lot, so throwing them away was a sad thought for me, so I decided to cook them to kill the germs. Hehe! Secondly, last week on a class trip (I teach culinary school) to Carrefour and City Park market, I went crazy with all the exotic foods out there and came away with a wide array of them as you will see from my ingredient list (I do get tired of using the same ingredients every day). So that's the story that brought me to this place where I'm eating one of the most delicious things I have ever put in my mouth. The flavour is also elevated by the quinoa rice whose recipe I will share after this. Let's go on an adventure! All ingredients can be found in major supermarket brands and large green grocers, including city park market.
