Ingredients

2 hrs 15 minutes
5 people
  • First Marination: I kg of chicken, 1/2 tsp of turmeric, 1 tsp of coriander powder, 2 tbsp of ginger garlic paste, 1 tsp of salt, 1/2 tsp of red chilli powder, 2 tsp of lemon juice, 2 tbsp of oil
  • Second Marination: 3 tbsp of yogurt, 2 tbsp of tomato puree
  • Spices: 2 dry red chillies, 2 cardamom, 1/3 tsp of asafoetida, 1 tsp of cumin seeds, 1 tsp of coriander powder, 1/2tsp of cumin powder, 1/2tsp of red chilli powder, 1/2 tsp of garam masala powder
  • Other Ingredients : 10 cashews, 6tbso of oil, 4 tbsp of cream, 2 medium sized onions chopped, 2 medium sized tomatoes chopped, 3 to 4 green chillies cut in julienne

Steps

    In a bowl mix together the ingredients under first marination and marinate the chicken with it and refrigerate for 45 minutes.

    Mix all the ingredients under second marination and marinate the chicken with it and refrigerate for another 30 minutes.

  3. 3

    Heat 2 tbsp of oil in a cooking pan and add the onions and cashew nuts till they are transparent. Then cool it and grind it to a paste in a blender.

  4. 4

    In the same cooking pan add the remaining 4 tbsp of oil and add the cumin seeds and asafoetida. When it crackles add the bay leaves, dry red chillies and cardamom.

  5. 5

    Add the cashew nut onion paste and rest of the spices and sauté for a while. Then add the chopped tomatoes and sauté for a while till oil separates.

  6. 6

    Then add the marinated chicken and sauté on high heat to coat it well with the masalas. Then add 1 cup of lukewarm water and bring it to boil. Simmer and cook on low heat for 20 mins till the chicken is cooked.

  7. 7

    Then add the cream and mix well and cover and cook for 10 minutes. Then adjust seasoning and switch of the flame and garnish with the julienned green chillies. Enjoy with chapati or rice.
