At first cut and wash the spinach leaves and boil for 2 to 3 minutes

Then cool the spinach and make a paste after adding green chillies with it.

Add mustard oil. Heat the oil and add Panchphoron.Then add chopped onions and sautee till it becomes brown. Then one by one add other masalas and salt. Make a gravy type consistency. Then add palak(spinach) puree.

Cook it for 1 minutes, add water to avoid sticking, add fresh coriander leaves and dry methi leaves. At last add boiled potatoes and salt. Stir it in medium heat and add some lemon juice and serve.
