Ingredients

Serves 10 to 12 servings
  • 12.3 ozhazelnut wafer cookies (about 350 grams)
  • 2 cupsmascarpone cheese (about 500 grams)
  • 1 cupheavy cream (about 250 grams)
  • 1 shotstrong espresso, cooled
  • 4 tablespoonssugar
  • 1 handfulpeeled and toasted hazelnuts, for garnish
  • 3-4wafer cookies, for garnish (from the total amount)
  • Melted dark chocolate, as needed, for garnish

Steps

    Line a medium loaf pan with plastic wrap.

    In one bowl, whip the heavy cream. In another bowl, beat the mascarpone with the sugar. Add the cooled espresso, mix, and gently fold in the whipped cream with a spatula until fully combined.

    Pour a layer of the cream mixture into the pan, then add a layer of wafer cookies.

    Continue layering cream and wafer cookies, finishing with a layer of cream. Smooth the top and place the semifreddo in the freezer to set.

    Before serving, remove from the pan, peel off the plastic wrap, and decorate with hazelnuts, wafer cookies, and melted dark chocolate.

    Let it sit at room temperature for about 30 minutes, then slice and serve. Absolutely delicious!
