Preheat oven to 375F. Using a sharp knief and cut halfway open each chestnut. This step is super important and also determine how quickly you can remove the shell once the baking is done.

Bake for 30 minutes. Once the timer is up. Take out the pan and start working on removing the shell. Using thick gloves or just a towel. It shall only take 2 seconds to remove it. If you work on a big batch and your room temperature is low, then only take out half sheet's amount and leave the rest warm in the oven. Temperature is also very important to keep the inner layer detached from the nuts.
