    Wash, peel, and cut the potatoes in half, then slice them (if they are large, cut them into quarters first, then slice).

    Peel and finely dice the onion.

    Heat plenty of olive oil in a large skillet. When hot, add the potatoes and onion, season with salt to taste, and fry everything together.

    In a large bowl, beat the eggs. When the potatoes are done, drain them in a colander to remove excess oil (about 10 minutes). Then add the potatoes and onion to the eggs. Gently mix, being careful not to break up the potatoes.

    In a skillet (I used a small one and made 2 omelettes), add a little of the reserved oil and pour in the egg and potato mixture. Cook for a few minutes until the bottom sets, then place a plate on top, flip the omelette onto the plate, and slide it back into the skillet to cook the other side for a few more minutes. Cook to your preferred doneness. Enjoy!
