Spanish Omelet

Recipe was received from my good friend who lives in Spain. She made it for my family when she came to visit us and we absolutely loved it. Its a perfect brunch meal.

Cooking Instructions

Pour 1/2 liter olive oil in a pan, high heat
- 2
Thinly slice the onion and put into the pan
- 3
Thinly slice the potatoes and place in pan
- 4
Leave the onion and potatoes in the pan for 10-15 minutes or until they caramelize
- 5
Once they caramelize, remove the potatoes and onion and place then in a large mixing bowel
- 6
Add 6 eggs and pinch of sea salt into the mixing bowel and gently mix

Place aluminum foil and cover for 15 minutes

Place 1 tbsp of olive oil (the same one used earlier) in a pan and put on high heat
- 9
Place the mixed ingredients and place in the pan. 1-2 mins on high then lower on medium heat for 2-3 mins.

Take a plate and flip the omelet to the other side

Cook the other side: 1-2 mins on high, 2-3 minutes on medium heat

Once it is cooked, remove from heat and place on a plate

A Spanish friend of mine taught us how to make it at a party. It became my signature recipe since then!Since it takes about 15 minutes to make, I recommend making it in between doing dishes or making other dishes.Cook it slowly over low heat without burning it! Adjust the amount of the eggs, or other ingredients to the size of the skillet.It's also great with green peppers, carrot, sausages etc...When you flip the skillet, the egg may drip out of it. I want to eat a Spanish Omelet!But I only had a couple eggs in the fridge.I used dashi-flavored eggs as inspiration when dealing with this conflict.Slicing the potato into strips adds more volume to the dish!When you're cooking it, slowly steam cook it over low heat. When it's time to flip the omelet, shake it out of the frying pan onto a plate, and then flip the plated omelet back onto the pan. Well I have often found recipes of 'Spanish omelette' featuring ingredients such as peas. Sounded outrageous to me as I believed it should only be potato onion and egg but on this version I have added zucchini .
