I felt like having a super messy burger. And this fit the bill. Adding chopped bacon and gouda cheese to the patties, piling on sautéed bacon onions and mushrooms, and topping with deli mustard beer cheese sauce French fried onions and spicy deli pickles. This is like having your own gastro pub.

Ingredients

8 burgers
  1. For the beef
  2. 3 lbs80/20 ground beef
  3. 1/2 lbminced bacon
  4. 6 ozgouda cheese, small cubes
  5. 2 tbsMontreal steak seasoning
  6. 2 tspblack pepper
  7. 4 clovesminced garlic
  8. 1 tspkosher salt
  9. 3 tbsworchestershire sauce
  10. 3 tbsred wine vinegar
  11. 24 ozpale ale or pilsner beer, divided
  12. For the beer cheese sauce
  13. 1lg package Velveeta or other American cheese
  14. 1/4 cupmilk
  15. 1/4 cupbeer
  16. 1 tspsmoked paprika
  17. Ingredients to caramelize
  18. 1/2 lbchopped bacon
  19. 1lg red onion, sliced
  20. 1/2 lbcrimini mushrooms, sliced
  21. 3 clovesgarlic, minced
  22. 1/4 cupwhite wine
  23. Other ingredients
  24. Brioche or onion buns, toasted
  25. Deli mustard
  26. French fried onions
  27. Kosher dill spicy pickles, use quality pickles. Not cheap ones

Cooking Instructions

    Mix all ingredients for the burger patties except for the beer in a large mixing bowl. Mix well. Cover with plastic wrap and set aside 30 minutes.

    After 30 minutes, form into 8 patties and put on a plate.

    Heat 2 lg frying pans on medium heat. In one, add all the ingredients to caramelize except the garlic and wine. Stir often.. In the other, place 4 patties. Fry patties until browning on both sides. Add 1/2 cup beer and cover to steam the patties. This will make sure the cook in the middle. Clean pan, and Repeat with the 4 remaining patties

    At the same time, in a saucepot, add all ingredients for the beer cheese sauce. Turn on medium low and cover. Stir often until everything is melted through. Switch to low heat to hold.

    When onion mixture is caramized. Add garlic. Cook 2 minutes. Then add wine deglaze pan. Simmer until liquid evaporates.

    Plate toasted buns. Spread with deli mustard. Add a patty. Then sautéed mixture. Next cheese sauce, fried onions, and pickles. Grab a fork and serve immediately. This one is a mess... enjoy.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
