Persimmons and sweet rice

I was craving a sweet treat and I had some ripe persimmons so I made this low fat dessert. I used Hachiya persimmons I got at the health food store.

If you’re not familiar with persimmons they are very soft when ripe, like a water balloon.

Ingredients

5-10 minutes
1 serving
  1. 1persimmon
  2. 3/4 cupcooked short grain white rice
  3. 1/4 cup+ 2 tablespoons nonfat milk
  4. 1 tablespooncoconut sugar
  5. 1/2 teaspoonvanilla extract
  6. Cinnamon
  7. Ginger
  8. Allspice
  9. Cloves
  10. Cardamom

Cooking Instructions

  1. 1

    Add rice and milk to pan. Heat on medium heat.

    Add coconut sugar, vanilla extract and spices to pan. A pinch of each, bigger pinches of cinnamon and ginger, less allspice and cloves, and a tiny smidge of cardamom.

    Mix until most of the liquid has evaporated.

    Slice persimmon and lay over rice in a bowl.
