Chole bhatura is popular combination of flavorful chole masala and soft bhatura. And it is paired with Rice kheer on the occasion of Dussehra. Dig into the recipe, cook and enjoy.

For Bhatura : In a bowl take maida, rava, sugar, salt, baking powder, curd and oil. Mix everything well. Add water as needed and knead soft and smooth dough. Cover the dough and set aside for 1-2 hours.

Rice kheer : Wask and soak basmati rice in water for 15 mins. Meanwhile in heavy bottom pan or pressure cooker heat milk on medium flame stirring occasionally.

When the milk comes to boil, take 2 tbsp of milk in a bowl and soak the saffron strands. Drain the rice and add it to the milk. Simmer and cook the rice on low flame. If using pressure cooker, cover and let it cook for 30 minutes.

Once the rice is cooked, add sugar, saffron milk and continue cooking without lid on low flame stirring occasionally until the rice is cooked well and the kheer thickens.

Add chopped nuts, mix well and cook for a minute.

Rice kheer is ready to serve warm or cold.

For chole : Soak kabuli chana in water with 1 tsp Baking Soda for 8 hours. Wash the chana and pressure cook with salt and 2 cups water for 5-6 whistles or until chana are cooked well and soft.

Roughly chop onions, ginger, garlic and grind to a fine paste. In a pan heat oil add onion paste and fry until it is golden brown.

Add chili powder, chili flakes, pepper powder, turmeric powder and fry on medium flame for a minute.

Roughly chop tomato and grind to fine paste. Add to the pan and cook till oil separates.

Take 4 tbsp cooked chana and grind to fine paste with required amount of water chana is cooked in. Add it to the pan and mix well.

Add in cinnamon, black cardamom. Mix and add jeera powder, coriander powder, garam masala.

Followed by amchoor powder and curd. Mix everything well. Add cooked chana along with water. Cover and cook till oil separates and gravy reaches required consistency.

Crush kasuri methi between your palm and add it to the gravy along with chopped coriander leaves. Mix in and cook for 2 minutes.

Chole is ready to serve.

Finally prepare the bhaturas. Knead the dough and divide into 10 equal balls. Roll into circular shape slightly thicker than regular puri. Deep fry in medium hot oil until golden brown on both sides. Prepare other bhaturas too. Bhaturas are ready to served.

Serve hot bhaturas with Chole and Rice kheer.
