Wash the basmati rice 3 to 4 times and soak for 20 minutes. Drain the water and keep basmati rise dry.

Chop the vegetables and arrange all ingredients.

Add 2 tbsp ghee to pot. Add whole spices.

When the spices begin to sizzle, add chopped onions and slit chilies.

When the onion turns golden brown, add the ginger garlic paste.

Saute well till the raw smell of ginger garlic disappears.

Add mixed veggies, crushed mint, soaked soya chunks.
Next saute everything well until the mint aroma comes. It takes 2-3 minutes.

As I was cooking in a pot, I added 3 cups of water.

Let it come to a rolling boil. I transferred to a big pot, added salt, drained rice and cashews.

Stir well gently and cover the pot. Cook for 10 minutes on low flame. The rice grains turn fluffy.
Gently mix with spatula and serve hot with raita.
