Get all your ingredients ready.

Cut the chorizo into pieces and sauté it in a small saucepan with 1 tablespoon of olive oil.

Add the chopped onion, mix, then add the spices and bay leaf.

Add the tomato sauce. Rinse out the container with a little water and add that as well.

Meanwhile, bring a pot of salted water to a boil and cook the pasta for 10 minutes.

Add the baking soda (or sugar) to the sauce to reduce acidity. Let the sauce simmer on low heat while the pasta finishes cooking.

After 10 minutes, before draining the pasta, reserve half a cup of the pasta cooking water to add to the sauce.

Place the sauce in a bowl, add the heavy cream, mix, and taste. Adjust salt if needed.

Add the cooked pasta to the sauce and mix well. Let it rest for 5 minutes before serving so the pasta absorbs the sauce. You’ll see how the liquid disappears and it becomes creamy and delicious.
