Dry purple Cauliflower bhaji

In a kadai heat 2 tbsp oil and add cumin seeds, Asafoetida, bay leaf and cloves When splutter add grated ginger and garlic and saute few seconds.

Add onion and saute until onions light golden brown. further add 1/2 tsp turmeric,1 tsp chilli powder, 2 tsp coriander powder and 3/4 tsp salt. saute well.When the spices are well roasted.

Then add 1 tbsp tomato puree and saute for 2 minutes.

Add gobhi, potatoes and mix well and saute for 2 minutes.

Now add frozen peas and saute few seconds and add 2 tbsp water, cover and simmer for 10 minutes.

Now add 1 chopped tomato and mix and again cover until tomatoes turn soft and mushy and cauliflower cooked well.

Now the cauliflower is ready. add 1 tbsp grated paneer and cook for 2-3 on medium flame. Add dry mango powder and garammasala and mix well. Turn off the flame.

Serve dry Cauliflower bhaji with hot chapati or rice.
