Leftovers Chicken Stock

I buy celery quite often because I know it’s good for me, but each time I remember I don’t like it all that much 🤣 I had some in the fridge that was going to be wasted so I put it in the freezer and thought I’d think of something to use it in at a later date. Even if you don’t like celery, it is a great addition to stocks and stews because it adds a real depth of flavour. I snapped the frozen stalks and added them directly to the stock pot and my broth today was really beautiful - rich, flavourful and gelatinous. I also added the juices and fats directly from the roasting tray too so put that in the fridge after your roast dinner too! #CookEveryPart

Ingredients

  • 1chicken carcass, stripped of meat
  • 2 stalksfrozen celery
  • 2frozen spring onions (or use fresh or half an onion)
  • 5peppercorns
  • Pinchsalt
  • 2 tbspapple cider vinegar
    Add acid to your stock pot for a richer more flavourful broth
  • Baking tray from your roast chicken, with fats and juices saved

Steps

  1. 1

    Break up the carcass with your hands and put it into your stock pot.

    If you’ve saved your roasting tray, pour boiling water into the tray and use a spatula to scrape the base. Tip it all into your stock pot.

    Add the rest of the ingredients and 1 L of water. Simmer gently on the hob for 4 hours (or more) with the lid on.

Tips

Add acid to your stock pot for a richer more flavourful broth

Adding 2 tbsp of an acid (such as cider vinegar) to the stock pot helps to break down the bones and collagen more of the meat resulting in a smoother, richer and more flavourful stock.
