I love using leftovers and this recipe does exactly that. Get your children involved too either the piping or decorating.

Preheat the oven to 140°C / 280°F

Place the egg white in a glass bowl. This must be clean and to make sure you can always use a kitchen towel with lemon juice or vinegar. Add the pinch of salt and start whisking.

When the egg white is light and airy, add the cinnamon and start adding the sugar, a little at a time, continuing to whisk.

The meringue should look glossy and marshmallow like, with a soft texture, but hold it's shape on the whisk.

Bake at 140°C / 280°F for about one hour or bake until dried.

Fill a piping bag with a raffle nozzle and start piping in a triangle shape onto a baking tray lined with parchment paper. Decorate with preferred sprinkles.
