First wash and soak the dal for one hour. Then cook for 1 or 2 whistles till the dall is cooked soft. Mash and keep it aside

Then fry all the spices with out oil and grind to a coarse powder.

In the same frying pan pour oil pop mustard seeds. Then add chopped onion and saute it well. Add tomato followed by brinjal and carrot. Then add this to the dall and cook till the vegetable soft.

Then prepare tamarind essence and add it to the dall and boil it for 5 minutes.

Add the spice powder. Add little water if required. Boil for two minutes and turn off the flame

Garnish with coriander leaves.

This sambar is suitable for idly, dosa, pongal and rava dosa
