Reasturant style Mutton dum biryani

In a cooker heat 3/4 cups oil,add sliced onion and fry till turn brown. Take out onions on kitchen paper to reduce extra oil.

In same oil add mutton pieces with 2/3 part of fried onions and ginger garlic paste,cook till sauted well.

Add whole spices and let it cook for a minute.

Now add all powdered spices, and salt, mix well and cook for few minutes.

Then add chopped tomatoes and cook until it tenders.

When tomatoes turned soft,cook for few minutes, add 2 glass of water and close the lid and pressure cook till 3 to 4 whistles or until mutton tenders.

When pressure release itself,open lid and check when mutton tenders or not, if tenders add beaten curd,mix well and cook for 5 minutes. Cook till oil comes on surface and switch off the flame.

Soak basmati rice for 1 hour, rinse water completely, heat large pot with lot of water, when boil add cumin seed, rice,salt and oil.

Let it cook with covered lid until rice 80% done. Strain on a strainer. Keep aside.

Now in a patili, at bottom arrange rice,then layer with mutton gravy.

Then layer with rice, sprinkle chopped coriander leaves, remaining fried onions, whole green chillies, red food colour and ghee,cover the lid and simmer until 15 to 20 minutes. Serve with raita.
