Oil- and Egg-free Tofu Cocoa Muffins

My son, who is 3 years and 5 months old, said he wanted to eat chocolate. I had none to give him (because I had hidden it so I could have it later lol). Instead, I decided to make him some nutritious and healthy muffins, with cocoa and tofu. He loved them and ate two all in one go. He tried to eat a third, realised he had eaten too much, and gave me half. He helped me by whisking the mixture, so they were especially tasty for him.

I used silken, undrained tofu. Adjust the amount of milk depending on the moisture content of the tofu. I used 40 g of sugar, and they were mildly sweet. Adjust the amount to your liking. Recipe by Minimame

6 servings
  • 100 grams◎Cake flour
  • 20 grams◎Cocoa powder
  • 1 pinch◎Salt
  • 4 grams◎Baking powder
  • 40 grams◎Sugar
  • 100 grams☆Milk
  • 150 grams☆Tofu

Steps

    Preparation: Put the ☆ ingredients marked into a bowl and mix well with a whisk.

  2. 2

    Put the ingredients marked ◎ in a different bowl and mix with the whisk. Add the ☆ mixture from Step 1, and fold it in with a rubber spatula.

  3. 3

    Bake for 20-23 minutes in an oven preheated to 180°C. Adjust the baking time as necessary.
