To make soya tikka chaap, first wash the soya chaap thoroughly in hot water. Remove them from the sticks and cut each chaap into four pieces.

In a bowl, add 1 cup yogurt, roasted besan as needed, salt to taste, dried mint, garam masala, and orange food coloring. Mix well. Marinate the chaap pieces in this mixture and refrigerate for 30 minutes. After marinating, brush a nonstick skillet with butter, place each piece of chaap on it, and cook until golden brown.

Serve this tangy chaap with mint-cilantro chutney.
