Ingredients

  1. 1 cupcarrot(cut into cubes)
  2. 1/2 cupred pumpkin(cut into cubes)
  3. 1 cupbeans (cut into small pieces length wise)
  4. 1 cupradish(cut into cubes)
  5. 1/2 cupcabbage (chopped)
  6. 1/2 cupraw green papaya(cut into cubes)
  7. 1/2 cupbrinjal(cut into cubes)
  8. 1/4 cupflatten beans
  9. 1/4 cupgreen peas
  10. 1/4 cupporato(cut into cubes)
  11. 1tomato(chopped)
  12. leavesas per need coriander
  13. to taste Salt
  14. 1/4 tspturmeric powder
  15. 1/4 tsppanch phutan(five dry spiced medley)
  16. 1dry red chilli
  17. 2green chilli
  18. 1/4 tspginger paste
  19. 1/4 tspcumin powder
  20. 2 tbspmustard oil

Steps

  1. 1

    Heat mustard oil in a kadai.When hot enough add the dry red chilli, panch phutana.

    When the aroma comes out add the chopped & washed vegetables.

    Add ginger paste & cumin powder to it.Sprinkle salt & turmeric powder.

    Mix them well, cover & cook for a while on low flame.

    After few mints remove the cover,mix the veggies together & again cover it & cook for another few mints till the veggies are cooked well (not mushy).

    Turn off the flame, sprinkle some chopped coriander leaves.Serve it hot with rice or phulkas.
