Kaitha Chutney

Kaitha also known as wood apple is a tree generally found in dry regions. It has a lot of health benefits. Most important is Kaitha is a rich source of vitamin B12 that usually found from animals. B12 and calcium are essential for bone.
I got the kaitha from the tree in our Paddy field. The fruit is hard like Bael but sweet after it's ripened.
One can make chutney with ripened kaitha by cooking or without cooking.
I have used minimal ingredients to make kaitha chutney as it has a sweet aroma and can be eater as it is.

As Katha has a hard cover, it is required to remove and extract the pulp.

Now mix all the ingredients, add 2-3 spoons of water.

Grind to paste and the yummy khaati, mithhi chutney is ready to be served. Thanks.

Jaggery can be added instead of sugar.
**Roasted cumin powder, green may be added.
***It is better to maintain original taste and flavor using minimal ingredients.
