Dongpo Pork Pressure-Cooked with Aromatic Star Anise

I was selected to be a taste tester for Mizkan grain vinegar. I decided to make a sweet and refreshing version of one of our family's favorite recipes, Dongpo Pork using star anise, which goes well with vinegar. I used ingredient amounts that are easy to remember.

Don't skip Step 1 where you sear the pork seals in the umami flavor.
The flavoring is on the sweet side, so during Step 7 you can adjust amount of soy sauce and sugar to your liking.
I like the eggs soft set, so I boil them separately. The boiled eggs will become flavored when you add them at Step 7. Recipe by Youtank

Ingredients

  1. 500 gramsPork belly (block)
  2. 5cm Green onions (the green part)
  3. 1 pieceGinger
  4. 50 gramsA. Grain vinegar
  5. 60 gramsA. Soy sauce
  6. 50 gramsA. Mirin
  7. 50 gramsA. Sake
  8. 5 tbspA. Sugar
  9. 150 gramsA. Water
  10. 1Star anise
  11. 1Katakuriko slurry
  12. 1Hard boiled eggs and bok choy

Cooking Instructions

  1. 1

Playing the leading roles in today's dish: star anise and vinegar.

  2. 2

Cut the pork belly into pieces.

  3. 3

Heat a pan over high heat and sear the pork belly pieces on both sides.

  4. 4

This will seal in the pork juices.

  5. 5

Put the pork from Step 4 into the pressure cooker with the green onions and ginger. Add enough water to cover and cover with a lid. Heat over high heat until the indicator pin pops up. Then cook over low heat for 20 minutes.

  6. 6

Remove from the heat and wait for the pressure to release naturally. After the pressure releases, rinse the pork in lukewarm water to remove excess fat.

  7. 7

Briefly rinse the pressure cooker. Put the pork, the "A" ingredients, and the star anise in the pressure cooker. Secure the lid and again heat over high heat until the indicator pin pops up. Then turn the heat down to low and cook for 10-15 minutes.

  8. 8

After the pressure releases naturally, it's done. If the flavors haven't penetrated enough, simmer it a little to reduce.

  9. 9

Arrange on a dish, pour on the sauce (thickened with the katakuriko).

  10. 10

Your Star Anise Dongpo Pork is done.

  11. 11

The broth from boiling the pork in Step 5 can be made into a seasoned egg soup. Skim off the scum, add salt and pepper and some Chinese soup stock.

  12. 12

This rich, juicy pork goes great with rice or beer.
