Prepare all the ingredients. Peel and dice the taro, place it in a pot, and steam until tender (add 2 cups of water to the outer pot if using a rice cooker). Once the switch pops up, let it sit for 5 more minutes, then remove. In another pot, bring 5 1/2 cups (1300 grams) of water to a boil and add the sago pearls.

Simmer over medium-low heat for 12-15 minutes until only a small white dot remains in the center of the pearls. Turn off the heat, cover, and let sit for 10 minutes until the sago is fully translucent. Scoop out and place in ice water to chill. (If the cooking water is too thick, rinse the sago pearls to remove excess starch.)

In another pot, bring 3 1/3 cups (800 grams) of water to a boil. Add the sugar and stir until dissolved, then turn off the heat.

Scoop the chilled sago pearls out of the ice water. In a clean pot, combine the desired amount of taro, sago pearls, coconut milk, and sugar syrup. Mix well, and your delicious taro sago with coconut milk is ready to serve.
