Today I found a bag of Soy Meat sitting in my pantry. I bought it from an Asian Grocery store when I was planning a Vegan feast for Christmas, but I never used it. So, I cooked my ‘Spicy Pork Soboro Don’ replacing Pork Mince with Soy Meat. The result? Probably no one would notice it is not meat.

Ingredients

2 to 4 servings
  • 100 gDry Soy Meat *Mince type
  • 1 cupMixed Vegetables (e.g. Carrot, Peas and Corn) *you can add more
  • 1 tablespoonOil for cooking
  • Cooked Rice to serve
  • 1Spring Onion *finely shopped
  • Marinade
  • 1 tablespoonSoy Sauce
  • 1 tablespoonMirin
  • 1small piece Ginger *grated
  • 1 teaspoonPotato Starch
  • 2 teaspoonsSesame Oil OR Oil of your choice
  • *Note: You can add some grated Garlic as well
  • Sauce
  • 1 tablespoonSugar
  • 2 tablespoonsSoy sauce
  • 2 tablespoonsSake (Rice Wine) OR Water
  • 1-2 teaspoonsToban Djan (Chili Bean Sauce)

Steps

    Soak Dry Soy Meat in plenty of warm water for 30 minutes. Drain and squeeze to remove excess water, then soak in fresh water, drain and squeeze to remove excess water again. *Note: This process is to remove unpleasant smell from Soy Meat. It might be unnecessary, or you wish to repeat a few times.

    Place squeezed Soy Meat in a bowl. Combine the Marinade ingredients in a small bowl, pour over the Soy Meat, and mix to combine well.

    In the small bowl that you just used, combine the Sauce ingredients.

    Heat Oil in a frying pan over medium heat, cook mixed Vegetables. When the Vegetables are cooked, add Soy Meat, and stir-fry for a few minutes. Add the Sauce, and stir to combine.

    Half fill a bowl with warm cooked rice and cover it with the mixture. Add some finely chopped Spring Onion, and enjoy.
