Ingredients

  1. 80 gUnsweetened Apple Purée
  2. 1Small Eating Apple
  3. 140 gDried Pitted Dates
  4. 35 gFlax Seeds
  5. 3/4 CupWater
  6. 1/4 CupMaple Syrup
  7. 60 gOlive Oil Spread (or other butter alternative)
  8. 100 gOat Bran
  9. 50 gOats or Oat Flour
  10. 50 gDark Rye or Wholemeal Flour
  11. 1/4 tspSalt
  12. 1 tspBaking Powder
  13. 1/2 tspXanthan Gum

Steps

  1. 1

    In a pan add:
    Apple Puree, Chopped Dates, Diced Apple (leave the skin on), 1/2 cup water.
    Simmer until softened.

    In a bowl:
    Add Flax Seeds and 1/4 cup of water to soak until gloopy.
    If you have a spice grinder, you can whizz up the flax into a fine powder if you prefer or leave them whole.

    In a large mixing bowl, weigh out the dry ingredients;
    Oat Bran, Oat Flour, Rye Flour, Baking Powder, Salt, Xanthan Gum.

    When the dates and apple are soft and sticky, add the flax seed mix and reduce a little further.

    Remove from heat, add Maple Syrup and Olive Spread.

    Allow the mixture to cool.

  5. 5

    When the mixture in the pan has cooled, add it to the dry ingredients in the mixing bowl and whisk to blend.

    Pour into a greased and lined brownie tray.

    Bake for 20-25 mins on 200c

  7. 7

    Allow to cool, cut into slices (will make 8-10 good size bars). Enjoy.
