Chicken Rolls with Plenty of Ginger

Ginger tastes so good, I wanted so much of it.
I tend to get rid of the chicken skin but you can leave it on if you prefer.
Make it for guests or put it in your lunchbox, it tastes good even when chilled.

Slice the chicken open lengthways, and butterfly, making sure both sides are an equal thickness.

Marinate the chicken for 20 minutes. Simmer the remaining marinade in a pan to use as sauce later.

Pat away any excess liquid and lay the chicken out on top of some cling film. Sprinkle over the ginger and basil and roll the chicken up in the cling film.

Heat in the microwave for 6 - 7 minutes. Once cooled, slice and serve.
