Semiya (vermicelli) upma

Pour one tsp ghee in a frying pan. Fry vermicelli till it turns slightly to golden brown. Transfer this to a bowl and keep it aside

Slice onion, slit green chillies, finely chop carrot, ginger and garlic.

In the same pan pour oil. Put mustard seeds.let it pop. Then add urad dall and chana dall.

Add Curry leaves, onion, green chillies ginger and garlic. Fry nicely. Add carrot and salt

Fry all this for a minute. Add water and allow it to boil. At this point add ghee.

Now add vermicelli and mix well. Cover it and cook for 3 minutes. Remove the lid and stir gently. Once the semiya is cooked turn off the flame and garnish with finely chopped coriander leaves

Plate it and serve with coconut chutney.
