Ingredients

  1. 3 tablespoonsoil
  2. 1/2 cupchicken livers chopped small
  3. 1/2 poundground pork
  4. 1/2 teaspoonCajun seasoning1
  5. 1 1/2 teaspoonkosher salt
  6. 1/2 teaspoonblack pepper
  7. 1large onion diced small
  8. 2 clovesminced garlic
  9. 1jalapeño diced small
  10. 2celery stalks diced small
  11. 2 teaspoondried parsley
  12. 1 tablespoonoregano
  13. 1/2 bunchgreen onions diced
  14. 1 1/2 cupschicken stock
  15. 1 cuplong grain rice, cooked

Cooking Instructions

    In a skillet, heat the oil on medium high heat. Add pork and chopped livers. Cook until browned.

    Add cajun seasoning, salt and pepper stirring well.

  3. 3

    Add 1/4 cup chicken stock and cook until absorbed stirring often.

  4. 4

    Add celery, onion, jalapeño, garlic and otegano. Stir to combine.

  5. 5

    Add the cooked rice, the remaining 1 1/4 cup chicken stock, parsley and green onions

  6. 6

    Mix well and cook until liquid is absorbed, and rice is heated. stirring to keep rice from sticking.

    You can spice it up more to your liking. I love this served with kielbasa or andouille sausage.
