My all time favorite and a perfect dessert for winters.

Cooking Instructions

Rinse, peel and grate the carrots using a grater or a food processor.
Keep it aside. - 2
Keep a thick pan on medium heat and add ghee in it. Add the grated carrots and let it cook. Keep stirring to avoid burning of the carrot.

Let it cook for about 5-10 mins. Add milk and stir until everything incorporates. Let it boil and stir occasionally to avoid milk sticking to the bottom of the pan.

After the milk boils and reduces to almost half the quantity, add in the sugar and mix everything well. Let it cook till the sugar melts completely.

Add in the cardamom and nutmeg powder and mix well. Keep stirring continuously to avoid the halwa from sticking to the bottom.

Let the halwa cook till the milk completely reduces. Add the chopped nuts and raisins. Remove from the flame when halwa gets creamy.

Serve lukewarm or cold as per your choice. To serve cold, let the halwa cool off before putting it in the refrigerator for about an hour.
