Once, while stopping by a local ramen shop, I was eating really delicious stewed pork chunks, and asked the store owner how to make them; they said that they boil it for hours to make the stewed pork chunks. I was wondering if I could make that restaurant's delicious stewed meat chunks in a short amount of time during the middle of my busy day, and came up with this.

Ingredients

3 servings
  • 500 gramsPork Belly Meat Block
  • 7/10to 1 Japanese leeks' worth (the green portion)
  • 70 mlWater
  • 60 mlSoy sauce
  • 70 mlSake
  • 70 mlMirin
  • 3 tbspSugar
  • 1 pieceGinger
  • 3Boiled eggs

Steps

    Place the leeks and pork belly meat block into a pressure cooker, add enough water to submerge the pork, and cook over a strong heat until the pressure cooker knob spins around.

    Once the pressure cooker knob has started to move around, reduce to low heat. Cook for 20 minutes, turn off the heat, and steam-cook for 10 minutes with the lid on.

    Open the knob and release the pressure, take out the pork, and throw out the water and leeks. Wash the pork clean in 105-120°F/40-50°C warm water.

    After washing the pork clean in warm water, cut into 6 pieces, and wipe the inside of the pressure cooker clean.

    Place the cut pork back into the pressure cooker, and add boiled eggs, thinly sliced ginger, soy sauce, sake, mirin, sugar, and water. Cook over strong heat.

    Reduce to a low heat once the knob starts to move around, stew for 15 minutes, turn off the heat, and steam-cook for an additional 15 minutes.

  7. 7

    Arrange on plates, and this unique stewed pork chunk dish is finished! It is tender and juicy! You can cut it with chopsticks!
