Chaulai Saag with Bodi

Chaulai saag is cultivated at the onset of summer. This green leafy vegetable is tasty and is a source of many kinds of nutrients. In Odia ,we call this sag as 'leutia'. This saag can be cooked with veggies, dal or as simple as it is. I cooked in a simple way and servers with fried and crushed Head dal bodi. This preparation is so tasty and more delicious. Can be a side dish or you can relish 'Chaulai' with steamed rice /Pakhala.

Clean, wash, discard the hard stems and chopped finely.

Heat 2 tsp oil and fry the bodi. Keep aside.

To the pan and rest 1 tsp oil,heat mustard seeds and allow to splutter. Fry dry chili.

Saute the garlic,till rawness is gone.

Add onion and saute, till translucent.
Mix the chopped leutia saag and fry on medium heat. When softened add salt and mix well.

Bring down to a plate. Garnish with crushed bodi and serve as a side dish with steamed rice.
