Maggi Milk Pudding

Whenever we think of Maggi noodles, savoury taste comes to our mind. We can make many different savoury recipes using maggi noodles. So I decided to think out of the box and make something which is sweet using maggi noodles. So I have come up with a very creamy and delicious milk pudding flavoured with saffron and cardamom. I have even prepared maggi noodle and pistachio praline to sprinkle over it. Slightly bitter praline cuts into the sweetness at the same time it gives a crunch which creates a very nice textural contrast. It is a delicious innovative recipe you must try.
Maggi Milk Pudding

So I decided to think out of the box and make something which is sweet using maggi noodles. So I have come up with a very creamy and delicious milk pudding flavoured with saffron and cardamom. I have even prepared maggi noodle and pistachio praline to sprinkle over it. Take one packet of Maggi noodles and crush the noodles with your hands. From this noodles, keep 2 tbsp noodles separate to make praline. Now heat a pan and add butter to it along with crushed noodles. Saute it on medium heat until light pink in colour.

In a bowl, mix sugar, corn flour and milk powder. Now slowly add milk to it whisking it continuously so that there are no lumps formed. Now add this mixture to the pan where we roasted noodles. Keep on cooking on medium heat until sugar melts.

Now mix water and agar agar powder. Heat it on medium heat until agar agar powder is dissolved completely. Add this mixture to the milk mixture and mix it well. Keep cooking on medium heat and keep stirring frequently. If you do not want to set the pudding, you can skip this step and instead you can add 1 or 2 tbsp extra corn flour in the beginning.

When the mixture turns slightly thick, add a pinch of saffron and mix it well. Keep cooking on medium heat until it is thick. Add cardamom powder, mix it well and turn off the heat. Let it cool down until warm.

To make praline, add sugar in a pan and let it melt on medium to low heat. When it becomes golden, add crushed maggi noodles and pistachio to it and mix it well. When it reaches dark golden in colour, add butter and mix it well. Turn off the heat.

Pour it on a greased butter paper or a foil paper. Level it and let it cool down completely. Now break it into pieces keeping a few pecies aside for garnishing if you want. Grind it into a coarse powder. Store it in an airtight container until use.

Now pour the prepared pudding in a big bowl or even you can pour it in individual serving bowls. Let it set in the refrigerator for 4 hours or until set.

Serve Maggi milk pudding chilled sprinkled with praline on top. Garnish with praline pieces and pistachio slivers.
