I found this on a site with recipes for young children, and not only did my little one love it, but everyone else did too. Personally, I'm not a fan of orange-flavored sweets, but this is incredibly fluffy and not bitter at all.

I found this on a site with recipes for young children, and not only did my little one love it, but everyone else did too. Personally, I'm not a fan of orange-flavored sweets, but this is incredibly fluffy and not bitter at all.

Mix the orange juice with the eggs, olive oil, and honey very well. (No mixer needed. A whisk is enough).

Add the baking powder, zest, and flour gradually, sifting the flour. If the mixture runs off the spoon too much, add a little more flour. If it's too thick, add a little more orange juice.

Transfer the mixture to a loaf pan or a round cake ring that has been greased with olive oil and floured to prevent sticking.

Bake at 340°F (170°C) on the middle rack for 45 minutes or until a knife comes out clean. Let it cool completely before cutting.
