Ingredients

4 cups
  • 250 gramdates
  • 150 gramjaggery
  • 50 gramtamarind
  • 2 teaspoonred chilli powder
  • 3 teaspoonroasted cumin powder
  • 1 teaspoonblack salt
  • 1/2 teaspoonsalt

    Add dates, jaggery and tamarind along with 1.5 cup of water in a pressure cooker and cook until 4 - 5 whistles. Let the pressure come down itself then with the help of a hand blender blend it. Make sure that there are no seeds of dates or tamarind in this mixture.

    Now pass this mixture through a sieve and add 1.5 cup water to it and mix it well.

    Now add salt, black salt, red chilli powder and roasted cumin powder to the chutney and mix it well. You can adjust the amount of spices according to your personal preference. You can even adjust the amount of water but I like to keep it thick and then store it in the freezer so that whenever I need it, I add water according to my requirement at that time.

    Date tamarind chutney can be stored in an airtight container in the freezer up to six months.
