Egg and Dairy-Free Easy Okara Donuts

I came up with a delicious snack that my child (who recently turned 1 year old) could eat safely. I think these would also be good for my post-natal diet.
30 g of sugar gives you donuts that are only slightly sweet. Kids can eat them plain while adults can top them with syrup.

Cooking Instructions

Place all of the ingredients into a bowl and mix together well. If it is too runny, add some more okara. If it is too dry and crumbly, add more soy milk.

The batter should be a good consistency once you can squeeze it with your hand and it sticks together. Squeeze the batter tightly with your hands to release the air pockets and then gently roll into small balls.

Place into hot oil and fry for 4-5 minutes. Since the dough falls apart easily, leave them be for the first two minutes. Once they have hardened, flip over.

When they have become golden brown, they're done. They are nice and crisp when fresh out of the fryer! They taste delicious topped with maple syrup, kinako soy flour, or sugar.
