I have torn the omelet so many times while trying to flip it over, but then my friend told me to add katakuriko. It works.

Ingredients

3 servings
  1. 4Eggs
  2. 1 tbspSugar
  3. 2 tspKatakuriko
  4. 2 tbspWater

Cooking Instructions

    Dissolve the katakuriko in the water.

    Break the egg into a bowl. Add the sugar and the katakuriko slurry from Step 1 and mix well. (If you use a whisk to beat it without letting it foam, it will turn out very smooth.)

    Strain the mixture for a smoother result. It's also fine without straining.

    Coat a frying pan with oil and pour in 1/4 of the mixture from Step 2, and cook.

    Insert long chopsticks underneath the omelet and flip it over to cook the other side. Repeat with the remaining egg mixture.

    Once cool, cut into desired sizes.
