Foolproof Shredded Omelet for Chirashi Sushi

I have torn the omelet so many times while trying to flip it over, but then my friend told me to add katakuriko. It works.
My family prefers a homemade country-style taste, which is why we add sugar, but you don't need to add any flavorings other than salt. Recipe by ura681225

Cooking Instructions
- 1
Dissolve the katakuriko in the water.
- 2
Break the egg into a bowl. Add the sugar and the katakuriko slurry from Step 1 and mix well. (If you use a whisk to beat it without letting it foam, it will turn out very smooth.)
- 3
Strain the mixture for a smoother result. It's also fine without straining.
- 4
Coat a frying pan with oil and pour in 1/4 of the mixture from Step 2, and cook.
- 5
Insert long chopsticks underneath the omelet and flip it over to cook the other side. Repeat with the remaining egg mixture.
- 6
Once cool, cut into desired sizes.

Foolproof Usuyaki Tamago (thin omelette) and Kinshi Tamago (shredded omelette) for Chirashi Sushi Foolproof Usuyaki Tamago (thin omelette) and Kinshi Tamago (shredded omelette) for Chirashi Sushi
I received feedback on my omurice (rice omelet) recipe I uploaded previously that people had trouble making the usuyaki tamago (thin omelette), so I've uploaded this recipe, explaining the conventional way to make it as well as some tricks I've discovered over the years. Each omelette is the size of the bottom of the frying pan. You can make 1 omelette with 1 ladleful of egg.Once you add the egg to the pan, cook it over very low heat as if you're drying it out.Shred the omelette for kinshi tamago once it's completely cooled using a sharp knife. The sieve shown in Step 6 is a bit small. Use a large one if you have one available. For 3 omelettes' worth. Recipe by vegeful cookpad.japan -
Ultra-Thin and Beautiful Shredded Egg for Chirashi Sushi Ultra-Thin and Beautiful Shredded Egg for Chirashi Sushi
Here is a recipe for creating a beautiful thin, finely shredded omelet.-The point is to pour a liberal amount of egg into the frying pan and then return the excess to the egg mixture bowl. Doing this will create a thin, shredded omelet.-Make sure to thoroughly beat the eggs.-Another point is the temperature of the frying pan. If the egg sizzles when pouring it into the pan, it's too hot.-If you use this method several times, you'll get the hang of it. Recipe by Cooking S Papa cookpad.japan -

Add dashi soup stock to make the taste closer to sushi vinegar because usually there is kombu seaweed and bonito soup stock in sushi vinegar. (Reference) Mix 100 ml vinegar, 4 tablespoons of sugar and 2 tablespoons of salt to make sushi vinegar. Use 100 ml for this. Recipe by Marinmaririn cookpad.japan -

Sushi Restaurant Tamagoyaki (Rolled Omelette) Sushi Restaurant Tamagoyaki (Rolled Omelette)
In our family, we have a home parties with hand-rolled sushi every month on payday. My husband is very picky about tamagoyaki and says "store-bought is better!" To shut him down, I adapted various recipes to my own preferences and taste. When he said "Yummy! This is the real thing!" I was so happy. There is a fair amount of sugar in this so it burns easily, but cook the omelette over as high a heat as you dare!! To control the heat, lift your pan up to put distance between the pan and the flame, rather than adjusting the flame itself. If you have an induction cooker, set it at 160°C (the setting for deep frying) and it should work well. Recipe by Minority cookpad.japan -
