Cooking Instructions

Sprinkle the gelatin into the ice-cold water. Leave for 15 minutes to absorb the water, then dissolve in a microwave or double-broiler.

Add the tofu, yogurt, sugar and lemon juice to a food processor and blend until smooth.

Then, add the dissolved gelatin.

Switch the food processor back on and, once again, blend until smooth.

Pour the mixture into serving cups and leave to chill in the refrigerator.

Once set, they're ready to eat!

For the kinako, I recommend using a blend of black soybean and black sesame seed powder. This dish is delicious piping hot, but I recommend having it the following day. I wanted to make a delicious tofu pudding without heavy cream. This recipe was developed through trial and error.Soft and jiggly, this delicious pudding will melt in your mouth.Since the recipe uses artificial sweetener, there is no sugar (meaning maybe you could eat this every day)!The number of calories will differ depending on the type of tofu and soy milk you use.Choose a tofu that doesn't have a strong tofu flavour to it. You could even use a mild processed tofu. Make sure to let the gelatin fully bloom just before heating. If too much time passes, the gelatin mixture will set before it can be stirred in. I tried it out, and the results were amazingly good!!I like to leave the tofu a bit chunky, since I think that makes the final result lighter and fluffier.I think berry jams go the best with this.
