  • 10 1/2 ozmasa (about 300 grams)
  • 7medium hierba santa leaves
  • 2 1/2 tbsplard (about 35 grams)
  • Salt, to taste
  • 8 3/4 ozblack bean paste (about 250 grams)
  • 7 ozshredded chicken (about 200 grams)
  • 7 pieceshydrated corn husks

    Add the lard and salt to the masa. Knead until well combined.

    Divide the masa into balls, about 1 1/4 oz (35 grams) each.

    Flatten each ball into a tortilla. Place a hierba santa leaf on top, then carefully flip so the leaf is underneath.

    Spread the black bean paste evenly over the tortilla, then add the shredded chicken.

    Fold the sides of the tortilla toward the center, pressing the edges to seal in the filling.

    Place the tamales on the hydrated corn husks. Steam for one hour. Serve with red mole sauce.
