Dangerously Good Oatmeal Maple Cookies

I read in a book that cookies made with oatmeal are crunchy. These really are!

The trick is to spread them thinly. That's it. When they're done, they'll have a crunchy texture. They're not so sweet, so if you'd prefer them sweeter, add sugar. If it's difficult to get the dough to come together, try adding a tablespoon of water. Recipe by Meifan

Ingredients

23 servings
  1. 60 grams☆Oatmeal
  2. 60 grams☆Whole wheat cake flour
  3. 1 tsp☆Baking powder
  4. 1 pinch☆Salt
  5. 2 tbspMaple syrup
  6. 2 tbspVegetable oil

Steps

    Note: Oatmeal is often stored in the confectionery section of the supermarket.

    Pre-heat the oven to 340F/170C. Place the dry ingredients marked with a ☆ in a bowl and whisk together.

  3. 3

    Add maple syrup and vegetable oil and mix with your hands. It's ready when it forms a dough.

  4. 4

    Roll into 2 cm balls and place on a baking tray lined with baking paper. Spread them out thinly.

  5. 5

    Place them in the oven heated to 340°F/170°C and bake for 15-18 minutes. When they have turned a nice golden colour, they are done.
