Ingredients

  1. Chutney
  2. 2 tablespoonsplain boondi
  3. 2 tablespoonsfresh mint leaves
  4. 2 tablespoonsplain yogurt
  5. 5-6green chilies
  6. 1/2 cupcilantro
  7. 1lemon
  8. 1 teaspooncumin seeds
  9. Salt to taste
  10. 7 ouncespaneer (about 200 grams)
  11. 1onion
  12. 1 cupbell peppers (red, yellow, green)
  13. Marinade
  14. 1 cupGreek yogurt (hung curd) (about 240 grams)
  15. 2 tablespoonschickpea flour (besan)
  16. 1 teaspoonKashmiri red chili powder
  17. 1 teaspoonblack pepper powder
  18. 1 teaspoondried fenugreek leaves (kasuri methi)
  19. 1 teaspoonground cumin
  20. 1/2 teaspoonturmeric powder
  21. 1 teaspoonginger-chili paste
  22. 1 1/2 teaspoonsmustard oil
  23. 1 teaspoonsalt
  24. 1lemon
  25. Salad
  26. 1/2 cupshredded cabbage
  27. 1tomato, julienned
  28. 1/2bell pepper, julienned
  29. 1onion, sliced
  30. 1/2 teaspoonlemon juice
  31. Salt and red chili powder to taste

Steps

  1. 1

    Chutney --- Add all chutney ingredients to a blender. Add lemon juice, cumin seeds, and salt, then blend into a smooth chutney. Transfer to a bowl.

    Salad --- Combine cabbage, tomato, onion, and bell pepper. Add salt, red chili powder, lemon juice, and cilantro, then mix well.

    Tikka --- Cut paneer, onion, and bell peppers into square pieces. Dry roast the chickpea flour.

    Marinade --- In a mixing bowl, add yogurt, roasted chickpea flour, and all marinade ingredients. Add lemon juice and mix well.

    Add the paneer, bell peppers, and onion to the marinade and coat well. Let it rest for 30 minutes.

    Thread the marinated paneer, onion, and bell peppers onto skewers in sequence. Heat a grill pan and grease it with butter or oil.

    Place the skewers on the pan and grill on medium heat, turning occasionally until cooked evenly.

    Transfer to a serving dish and serve hot with chutney and salad.
