Amaretti Abruzzesi

Hi everyone! This is a traditional dessert I love for its unique, aromatic flavor: amaretti—soft cookies made from a dough of sugar, egg whites, and almonds. They're easy and quick to make, perfect with coffee, or as a base for other desserts (have you ever tried spreading them with a little hazelnut cream to make a twist on baci di dama? Or using them as a base for tiramisu? So delicious!).

Start by mixing the egg whites, sugar, almond extract, and almond flour together. Let the mixture rest for at least 2–3 hours.
Note: If you don't like or can't find bitter almonds, use 2 1/2 cups (350 grams) regular almonds.

After the dough has rested, dust your work surface with an equal mix of flour and sugar. Place the dough on top, knead it, and form small balls. Arrange them on a baking sheet lined with parchment paper.

Bake at 300°F (150°C) for about 30 minutes, or until lightly golden. Remove from the oven, let cool, and enjoy these delicious cookies whenever you like!
