I decided to make simple and easy fried veggies for my breakfast. Actually, I haven't used any masala powder for this recipe. Still it is tasty and flavoured veggies fry.

Ingredients

3-4 servings
  1. 1 cupchopped carrots
  2. 1+1/2 cup chopped French beans
  3. 1boiled medium potato chopped
  4. 1medium onion sliced lengthwise
  5. 2green chili (not so hot) chopped
  6. 1 tspchopped ginger
  7. 1 tspchan dal
  8. 1 tspsplit urad dal
  9. 3-4crushed dry curry leaves
  10. 1 tspponch phutan
  11. 1/2 tspturmeric powder
  12. 2 tspedible sessam oil
  13. As per tasteSalt

    Take chopped carrots, beans, boiled potatoes in microwave safe bowl. To this add turmeric and a pinch of salt and mix well. Cook in the oven for 5-7minutes.

    Heat oil in kadhai. Add ponch phutan and allow to splutter. Add curry leaves, onions, both the dals, green chili and ginger. Saute on medium to low flame till the onions are translucent and an aroma of fried dals, curry leaves emanate.

    Add the cooked veggies. Mix well, cover and cook for 2-3 minutes. Meanwhile check and adjust the seasoning. Serve hot with Poori/Luchi
