The availability of fresh colourful veggies, available in the morning market, drive me to dilemma to get what for me. Thanks that, its still winter here and I get a lots of coloured veggies.
I decided to make simple and easy fried veggies for my breakfast. Actually, I haven't used any masala powder for this recipe. Still it is tasty and flavoured veggies fry.

I decided to make simple and easy fried veggies for my breakfast. Actually, I haven't used any masala powder for this recipe. Still it is tasty and flavoured veggies fry.

Take chopped carrots, beans, boiled potatoes in microwave safe bowl. To this add turmeric and a pinch of salt and mix well. Cook in the oven for 5-7minutes.

Heat oil in kadhai. Add ponch phutan and allow to splutter. Add curry leaves, onions, both the dals, green chili and ginger. Saute on medium to low flame till the onions are translucent and an aroma of fried dals, curry leaves emanate.

Add the cooked veggies. Mix well, cover and cook for 2-3 minutes. Meanwhile check and adjust the seasoning. Serve hot with Poori/Luchi
