This succulent Chicken is often barbecued on charcoal for the amazing extra flavour and smokiness. Dajaj means Chicken and Faham means Coal in Arabic. It is often a crowd pleaser and a very popular Lebanese dish often enjoyed with Garlic Toum (Garlic dip) and lots of Salad alongside Rice and Pita Bread. Infact this Chicken is loved all over the Gulf Peninsula. The marinade is exactly what makes it so delish. It is therefore an important part. And it is usually grilled on a barbecue for an awesome texture and flavour. I have roasted it in an oven making it equally delish and lipsmacking. Happy Grilling with Zee!

Ingredients

45-50 minutes
5 servings
  • 1Whole Chicken
  • 2 tbspGinger garlic paste
  • 1 tspPaprika powder
  • 1 tspBlack Pepper powder
  • 2 tspSalt
  • 1 tspTurmeric powder
  • 1/4 cupHung Curd
  • FOR ROASTING
  • 2-3Dry Red Chillies
  • 1 tbspCoriander powder
  • 10-12Black Pepper powder
  • 1 tspCumin Seeds
  • 1 inchCinnamon stick
  • 1Tomato roughly chopped
  • 1Onion roughly chopped
  • 1 bunchchopped Coriander Leaves
  • 2-3 tbspOlive Oil

Steps

45-50 minutes

    Make deep slits across the Chicken. Roast all the whole spices and grind. To this add roughly chopped Tomato and Onion. Now marinate Chicken with all the powdered spices and Hung curd. Refrigerate it overnight for best results.

    Roast it on a charcoal grill on a medium high heat for about 25-30 minutes until a bit charred turning it over every now and then. Baste it with Oil before doing it. Keep an eye on it and it doesn't take much time either. It will turn out juicy and succulent. OR

    Preheat the oven to 240°. Now transfer the marinated Chicken to a butter paper lined baking tray and roast it until done. I had roasted it in an oven until fully done. I did not Grill it. Serve it hot with Lebanese Garlic Sauce and Rice.

    NOTE - I have given the recipe for One Chicken here. This can be doubled or tripled as per the requirement.
