Chicken coconut fried Rice

#ramadansadaka very healthy delicious recipe for sahur or iftar.
Steps

Add 1 tbsp of oil in a pan fry/toast the rice till golden brown add coconut milk, water, salt and mix.

Cover and allow to cook till tender, keep aside.

In a pan heat 1 cup oil add beef/chicken breast (cut in strips) add salt, ginger, garlic, mixed spices and seasoning cube stir fry till done, keep aside.

Add the toast rice mix well adjust your seasonings add beef/chicken mix and cover to steam for 3 minutes,

Add green pepper (diced), red pepper(diced), sweet corn, and spring onions mix well cover for a minute and serve.

Use same oil in a pan add chopped onions, ginger, garlic, scotch bonnet, carrots(diced) stir fry till soft
